La choucroute est du chou coupé finement et soumis à lactofermentation dans une saumure. L'origine du mot est à rapporter à l'alsacien sürkrüt (Sauerkraut en allemand), littéralement « chou aigre ». Par extension, le terme désigne aussi le plat de choucroute cuite avec son accompagnement.

The sauerkraut is cabbage cut finely and subjected to lactofermentation in brine. The origin of the word can be traced back to the Alsatain sürkrüt (Sauerkraut in German) literally "sour cabbage". The term also designates the dish of cooked sauerkraut with its accompaniment.
